Grilled Curry Chicken Skewers

These sweet and spicy skewers were made for summer grilling. Serve with a fresh salad, cold drink and some sunshine.

Prep Time: 5 mins Cook Time: 12 mins Serves: 2-3

Ingredients 

2 lbs boneless / skinless chicken thighs

For the Marinade

  • 2 tb Grumpy Ginger Malaysian Red Curry blend
  • 2 tb soy sauce
  • 1.5tb honey
  • 1 tb fresh lime squeeze

    Instructions 

    1. Cut chicken thighs into ~1 inch wide pieces (not too small or they'll fall off the skewers).

    2. Toss marinade ingredients together until mixed well. Add chicken and coat evenly. Marinate for at least 30 mins.

    3. Heat gas grill to medium-high. Thread marinated chicken onto skewers.

    4. Place chicken skewers on grill and cook, turning every 3 -4 minutes until golden and cooked through, about 12-15 minutes depending on the temperature of your grill.

    5. Remove from grill and let rest for 5 minutes. Finish with lime squeeze.
